General characteristics:
Biannual species that can behave as a perennial but is normally grown as an annual to harvest its bulbs. The stem is a disc with very short internodes from which the leaves grow, forming fleshy and enveloping sheaths on the lower part, giving rise to the bulb, and on the upper part a cylindrical, green, welded blade. Under normal conditions, flowering takes place in the second year, but it is common to see onions in flower in their first year, usually due to an inappropriate growing season. The central bud emits a hollow flower scape which ends up emitting a spherical flower mass. The outer leaves of the bulb, when dry, form a sheet called tunic which can acquire various colours depending on the variety and are classified as white, yellow and red.
